Over the summer in 2010, my mummy had taught me to make cup cakes using a cake mix.  Later she promised that she would show me how to make a cake from “first principles”.  She said that it was very different to a cake mix because first off you had to start from scratch “creaming the butter and the sugar”.  She said the steps were kind of the opposite of a cake mix because you added the dry things to the wet things instead of the wet things to the dry things.

That made me start thinking … why?

Do you have to follow the steps in the instructions?

What happens if you don’t?

Do you have to use exactly the same ingredients as the recipe?

What happens if you don’t?

Mummy said it was all about chemistry and that baking a cake was about the chemical reactions between the ingredients while you are mixing and while it is baking.  Sometimes it worked and sometimes it was a disaster and sometimes you could discover something completely new just by mixing things up!

So we googled around to find a Red Velvet Cup Cake recipe that we could use and then decided to see what would happen if we did what some of the recipe users suggested. Disobey the instructions!

    I am now in Grade 7 and I still make Red Velvet cakes but not often.

    Even though I decided the one bowl method was the best, I usually follow the recipe.
